Open task manager and see if any processes are occupying large CPU, memory or disk time. Have you done the basic "running slow" checks and if so what were the results? However I'd personally go back a step, especially if your "IT guy" is recommending copying the AppData folder as I wouldn't be confident in their skills in diagnosing why it is running slow. The whole point of a factory reset is to refresh all system files, so keeping any of them won't be useful.
